Freedom Bakery is a Scottish artisan bakery putting a creative twist on baking and a social conscience into our business. We are a social enterprise that believes that people at risk of committing crime can benefit significantly from professional training and employment opportunities. We operate a wholesale bakery supplying restaurants, retailers and cafes specialising in sourdoughs and slow fermented breads.



  • White Sourdough
    Large / Small
    Our signature white sourdough is slow fermented over 24 hours. The wheat used for our flour is grown and milled in East Lothian and our starter began its life 15 years ago! This bread is versatile and by far the our top-selling product! Can be frozen. Ingredients: Organic white flour, white flour starter (15 years old!), salt.
  • Wholemeal Sourdough
    Large / Small
    A wholesome sourdough bursting with flavour. Can be frozen. Ingredients: White flour, Organic Wholemeal flour, salt
  • Ryeberry Sourdough
    A dense, dark coloured sourdough full rye ‘goodiness’ with mild tanginess. For this one we recommend it sliced thinly to serve with wintry soups or as the based of open sandwiches. Ingredients: Light Rye flour, whole rye flour, wheat starter, rye grain, treacle, coffee, salt.

  • Puff Pastry
    N.B. Our puff is supplied freshly rolled not frozen. Can be frozen. Ingredients: Organic white flour, sugar, salt, butter.
  • Croissant
    16 pieces
    We pride ourselves as being one of the few artisan bakeries that actually make their croissant from scratch! Slow fermented over a 28 hour period, our croissant is amazing, even if we do say so ourselves! Ingredients: Organic white flour, milk, sugar, salt, yeast, French butter, egg.
  • Pain au Chocolat

    We use Valhrona chocolate for our pain au chocolate! Ingredients: Organic white flour, milk, sugar, salt, yeast, French butter, egg, Valhrona chocolate.
  • Cinnamon Bun
    24 pieces
    Ingredients: Organic white flour, milk, sugar, salt, yeast, French butter, cinnamon.
  • Copenhagen
    24 pieces
    An almond and apricot Danish pastry. Ingredients: Organic white flour, milk, sugar, salt, yeast, apricot jam, currants, French butter, marzipan, almonds.


  • White Bloomer
    Large / Small
    This is our simplest loaf. We allow a slow fermentation over 24 hours to allow the flavour to really develop in this bread. Perfect for sandwiches and to serve with soup alike. Can be frozen.. Ingredients: Organic white flour, milk, salt, yeast.
  • Brioche Buns
    Light, sweet and oozing with flavour with a variety of uses for both savoury and sweet tastes. Our buns are made using French butter which gives a better flavour, and caramelises better on the grill. Can be frozen (place in a paper bag to freeze) Ingredients: Organic white flour, eggs, sugar, salt, French butter.
  • Baguette
    Our baguettes are top notch! It takes 48 hours to produce our baguettes because we ‘autolyse’ our flour, a process which helps to break down the carbonhydrates in the flour to give a better crust, and a much fuller flavour. Can be frozen. Ingredients: Organic white flour, salt and yeast.
  • Struan
    The epitome of Scottish Artisan, a bread lovers’ bread, nutty and slightly sweet in flavour and full of whole grain, it’s a bread we recommend you just tear up and tuck in! Can be frozen. Ingredients: Organic Wholemeal flour, organic white flour, organic light rye flour, buttermilk, salt, yeast, honey, rye grain, oat grain, barley grain, wheat grain.
  • Lennox Loaf
    This loaf was conceived by one of our graduate bakers who picked up the ropes so quickly we let him develop this delicious walnut and rye bread. Good for serving with cheese. Can be frozen. Ingredients: Dark rye flour, organic white, walnuts, malt extract, yeast, salt.



The thing about bread is that (nearly) everyone eats it. It’s a simple staple that requires both the head and heart to achieve the desired result. We believe everyone deserves a chance to learn a craft that can lead to a job. We’re not experts in employability but we do care an awful lot about people and artisan bread. Through teaching baking and developing a passion in our people, we believe one can turn away from crime for good.
